Carlo’s Lean Sausage Soup
3 T extra virgin olive oil
1 16oz. can white beans (cannellini), rinsed and drained
1 C chopped onion
1 garlic clove sliced thin
2 C summer squash, sliced thin
1 yellow and 1 red pepper, sliced thin
2 cans of diced Roma tomatoes
Salt
Pepper
Italian Seasoning
2 lbs. Carlo’s Lean Sicilian Sausage, cut into one inch pieces
Pecorino Romano Cheese
Chicken Broth
Escarole lettuce (Just a little cut into strips to scatter over the soup near the end of the cooking)
Heat oil in large heavy pot over medium high heat. Sauté sausage and reduce heat to medium. Add onion and peppers, sauté, then add the squash and cook until clear. Add the tomatoes and beans, and salt, pepper and Italian seasoning to taste. Add some cheese for flavor or use it on the table.
